What Are Boozy Popsicles?
Simply put, they are regular popsicles with an added kick of alcohol, normally vodka or rum.
The ones we are going to make today are a combination of boozy strawberry popsicles and blueberries too!
As you might know, alcohol has a much lower freezing temperature than water (about -16 degrees Fahrenheit/-27 Celsius for vodka, for example), for this reason, you have to make sure not to put too much alcohol in your boozy popsicles otherwise they won’t freeze.
Patriotic Boozy Popsicles Ingredients
If you have never attempted homemade boozy popsicles, you are in for a treat!
To make these layered popsicles, you need to work in stages, creating and freezing each layer at a time.
I’ve separated the ingredients for each layer so if you want to make a popsicle with just one of the colors, you can triple the recipe for that layer.
This recipe makes 6 popsicles.
For each layer, you will need simple syrup.
To make simple syrup, you need:
- 1/2 cup granulated sugar
- 1/4 cup water
Boil the water until the sugar dissolved then let it cool before using.
You can store simple syrup in the fridge for weeks and use it in drinks like mojitos.
Ingredients For Each Layer
To Spike Pops: Add 1.5 tbsp of vodka to each layer
Strawberry Layer
- 1 1/3 cup chopped strawberries
- 3 tablespoon simple syrup
Cheesecake Layer
- 8 oz cream cheese, room temperature
- 3 tablespoon simple syrup
Blueberry Layer
- 1 cup trimmed and quartered blueberries
- 3 tablespoons simple syrup
Equipment For Making Boozy Pops
- Popsicle Molds
- Medium sized bowl
- Whisk
- Blender or immersion blender
How To Make Patriotic Boozy Popsicles
Make The Simple Syrup
- Add the granulated sugar and water to a pot.
- Bring to a boil.
- Remove from heat and allow to cool down for 20-30 mins.
Make The Red Layer
Chop up the strawberries and add to a blender
Add 3 tbsp of simple syrup and blend until smooth.
Pour into the bottom of the popsicle mold and freeze for one hour (minimum)
Make The White Layer
After an hour, mix the cream cheese and simple syrup.
Add to the popsicle mold.Freeze for at least one hour.
Make The Blue Layer
Lastly, blend the blueberries and simple syrup
Pour into the molds and add the popsicle sticks.
Freeze for 5+ hours or overnight for best results.
Tips For Making Amazing Popsicles
Strain the berries if you’d like or add in chopped up berries for added texture.
Make sure to let each layer have time to freeze or else it will blend together and the layers will not be as clear.
What Alcohol Is Best For Popsicles?
Vodka is normally the alcohol of choice for boozy popsicles because it has a more neutral flavor and freezes well if you use a ratio of about 4:1 or 5:1.
Will Tequila Freeze In A Popsicle?
Yes, tequila will freeze so you can use it instead of vodka in these red, white and blue freezies if you prefer.
How Long Do Boozy Popsicles Take To Freeze?
You will want to put your popsicles for a minimum of 5 hours to make sure the layers are solid. Overnight is your best bet if time allows.
Patriotic Boozy Popsicles
Ingredients
- Simple Syrup (1/2 cup granulated sugar and 1/4 cup water)
- 1 1/3 cup chopped strawberries
- 8 oz cream cheese at room temperature
- 1 cup fresh blueberries, trimmed and quartered
- 4.5 tsp plain vodka
Instructions
- Add the granulated sugar and water to a pot.
- Bring to a boil.
- Remove from heat and allow to cool down for 20-30 mins.
- Chop up the strawberries and add to a blender.
- Add 3 tbsp of simple syrup and blend until smooth.
- Pour into the bottom of the popsicle mold and freeze for one hour (minimum)
- After an hour, mix the cream cheese and simple syrup.

- Lastly, blend the blueberries and simple syrup
