Piña Colada Mimosa
You are probably familiar with the classic mimosa recipe which is always a hit at any occasion.
But when you are looking for something extra special, why not switch up the classic?
This Piña Colada version is a tropical mash up for two fantastic drinks – the mimosa and the Piña Colada!
It is similar to my Soleil Mimosa Recipe but wit the addition of coconut rum for extra tropical flavor!
It is perfect for sipping poolside and summer parties.
This tasty cocktail is:

Piña Colada Mimosa Ingredients
You don’t need anything too complicated to make this tropical mimosa cocktail.
No special equipment is necessary and all you need is a Champagne flute or coupe.
This recipe makes 6-8 mimosas depending on the size of your glasses.

Ingredients needed:
- Coconut Rum
- Champagne or similar
- Coconut Milk
- Pineapple Juice
- Pineapple Slice (garnish)
- Cherry (garnish)
Do I have to use Champagne in my mimosas?
I normally use either Cava or Prosecco in my mimosas.
This are one place where you don’t need to buy the most expensive alcohol in order to make a great tasting drink.
If you want to use Champagne, then you can but if the budget won’t stretch to it, Cava or Prosecco is perfect for that.
Piña Colada Mimosa Recipe: Directions
Step 1
Fill your Champagne flute about 1/4 of the way with coconut rum.
Step 2
Add 1/4 pineapple juice and 1/4 coconut milk.
Step 3
Top the glass with Champagne.
Garnish with a pineapple slice & cherry.
Piña Colada Mimosa
You'll love this tropical taste on the classic mimosa! It is easy to make and perfect for sipping by the ocean.
One standard bottle of Champagne or Prosecco should make 8 glasses of this mimosa.
Ingredients
- 1 Bottle Champagne or sparkling wine
- 2 Cups Pineapple Juice
- 2 cups of coconut rum
- 2 cups of coconut milk
- Slices of fresh pineapple
- Maraschino cherries
Instructions
- Fill a champagne flute 1/4 of the way with coconut rum.
- Add 1/4 pineapple juice and 1/4 coconut milk.
- Top off with champagne.
- Garnish with a pineapple slice & cherry
Notes
- You can use any sparkling wine you wish for this cocktail. My preference is Cava as it is cheaper (!) and a bit lighter.
