What is in the Tropical Rainbow?
Obviously you know that this is a cocktail that contains alcohol (coconut rum and blue curacao). It also includes a couple of other ingredients which give it the beautiful color.
The Tropical Rainbow contains the following:
- 1 ounces Malibu Rum
- 6oz Pineapple Juice
- 1 ounce Blue Curacao
- 3/4 ounce Grenadine
- Maraschino Cherries
If you are familiar with a Blue Hawaii cocktail, you probably are thinking the Tropical Rainbow is familiar.
The main different between the two drinks is that the Blue Hawaii contains rum, pineapple juice, Blue Curaçao and sweet and sour mix instead of grenadine.
What is Blue Curacao?
Blue Curacao is a citrus flavored liqueur made with the dried peel of the bitter orange laraha, a citrus fruit, grown on the Dutch island of Curaçao.
Although we often think of Curacao as being blue, you can also get clear and orange colored versions. The blue is simply blue food coloring.
Blue Curacao tastes citrusy as you might expect. It is both tart and sweet.
Is Blue Curacao Non-Alcoholic?
Traditional Blue Curacao does contain alcohol but you can buy non-alcoholic versions that will color your drink without getting you drunk.
The most common non-alcoholic Blue Curacao is the Torani Blue Curacao Syrup.
What Can You Substitute for Blue Curacao?
If you want the alcoholic content but don’t have any Blue Curacao, you can use a citrus liqueur such as Triple Sec and add a few drops of blue food coloring to your drink.
What tools do I need to make this Malibu Rum And Blue Curacao Cocktail?
You really don’t need much in order to make a Tropical Rainbow.
You don’t need a cocktail shaker or a strainer which makes a change from most mixed drinks. All you need is a steady hand and a separate container for mixing the Blue Curacao and Malibu Rum before pouring.
I like to use hurricane glasses for this drink.
How To Make The Blue Curacao Rum Cocktail
Step 1:Add The Grenadine
Pour the grenadine into the bottom of the glass
Step 2: Add Ice
Add ice gently to the glass
Step 3: Mix the alcohol
Mix the Blue Curacao and Malibu Rum in a cocktail shaker.
Pour the mixture gently over the ice.
Step 4: Top with Pineapple Juice
Fill the glass with pineapple juice
Step 5: Garnish and Serve
Add cherries and serve

- 3/4 oz Grenadine
- 1 oz Malibu Rum or similar coconut rum
- 1 oz Blue Curacao
- 6 oz Pineapple Juice
- Maraschino Cherries
- Ice
Instructions
- Pour the grenadine into the bottom of the glass
- Carefully add ice to the glass
- Mix the Blue Curacao and Malibu Rum into a separate container.
- Pour the mixture gently over the ice.
- Fill the glass with pineapple juice
- Add cherries and serve
