Leprechaun Mimosa Ingredients
You likely know that the classic mimosa is made with Champagne and orange juice.
For this St Patrick’s Day Mimosa, we use Blue Curacao along with some melon liqueur to get that amazing teal color.
We still keep the Champagne as no mimosa is complete without some bubbles!
Of course, feel free to use any sparkling wine you like including Prosecco or Cava. It really is all up to personal preference.
These are the simple ingredients you need for this delicious mimosa.
As far as special equipment goes, you don’t need anything more than a fantastic Champagne flute (I used these stemless Champagne flutes from Amazon!).

- Midori or another melon liqueur
- Pineapple juice

- Opt for a dry Prosecco to balance the sweetness of the Blue Curacao and Melon liqueur
- You can garnish your cocktail with a fun St Patrick’s day shamrock cocktail pick or a slice of green melon.
Leprechaun Mimosa
This delicious St Patrick's Day Mimosa is just the thing you need to celebrate the Emerald Isle!
Not only is this holiday cocktail easy to make, but it is also impressive to serve to guests too!
One bottle of sparkling wine makes approximately 6-8 Mimosas.
Ingredients
- 1 Bottle Champagne or sparkling wine
- 1/4 cup Blue Curacao
- 1/4 cup of Melon Liqueur
- 2 cups pineapple juice
Instructions
Split the blue Curacao between each glass.
Next, add the melon liqueur to each Champagne glass then add the pineapple juice until each glass is half full.
Top with Champagne and serve immediately.
Notes
- You can use any sparkling wine you wish for this cocktail. My preference is Cava as it is cheaper (!) and a bit lighter.
