Have you heard of Empress 1908 Gin? I first came across it on Instagram and the pretty lavender colour just blew me away.
I knew I had to create a drink using it so I made a beautiful rainbow cocktail that is now one of my favorite Empress 1908 gin drinks.
This gin cocktail is made with pineapple and orange juice and looks as good as it tastes. You get an amazing rainbow effect by layering the liquids carefully making it not only delicious but super impressive too.

What is in the Rainbow Layered cocktail?
A mix of juices and gin make this cocktail all the colours of the rainbow. The only tricky bit about creating it is to make sure you layer everything in order so that it stays pretty.
Stirring the drink up will ruin the layers and, while it will taste great, you will lose the rainbow effect.
This End of the Rainbow Cocktail contains the following:

- 3 ounces Pineapple Juice
- 3 ounces Orange Juice
- Drizzle of Grenadine
- 2 ounces Club Soda
- 2 ounces Empress 1908 Gin
What Is Empress 1908 Gin?
Empress Gin is named after the legendary Fairmont Empress hotel in Victoria, British Columbia.
The gin came about as result of a collaboration between the hotel and Victoria Distillers.
The gin gets its beautiful purple colour and citrusy taste from its unique ingredients:
- Traditional Botanicals such as juniper
- Butterfly Pea Blossom (this is what gives the gin its signature colour).
- Empress Black Tea (served at the hotel)
The purple colour of Empress 1908 gin makes it a wonderful addition to summer drinks and cocktails as you can make some awesome creations (the Empress 1908 website has a lot of fun ideas).
Today I have come up with my own Empress gin cocktail that is sure to wow the guests at your next party or event.

What tools do I need to make the rainbow cocktail?
You don’t need a cocktail shaker or anything to make this drink but you will need a cocktail spoon and a steady hand. If you are in a pinch, a teaspoon will also work well.
How To Make A Rainbow Layered Cocktail
Here’s how to make this impressive looking cocktail in minutes.
Step 1:Add Ice
Add your ice to the glass first
Step 2: Add The Juices
First add the pineapple juice to the glass. Once it has settled, add in the orange juice.
Step 3: Drizzle With Grenadine
Add a small amount of grenadine or raspberry syrup if you don’t have grenadine. This will give the cocktail the “sunset effect”, similar to a Vodka Sunrise cocktail.
Step 4: Layer in Club Soda
Next, add your layer of club soda which is the clear/white you can see the the photos
Step 5: Top With Empress 1908 Gin
Now for the part you have been waiting for! Finish off your cocktail by adding your layer of lilac Empress gin to the top of the glass

Rainbow Layered Cocktail
This colourful cocktail is very easy to make and perfect for wowing your guests at any occasion.
Made with the beautiful Empress 1908 Gin from Victoria, British Columbia, this is a drink you won't forget in a hurry.
Ingredients
- Ice for the bottom of the glass
- 3oz pineapple juice
- 3oz orange juice
- Drizzle of grenadine
- 2oz club soda
- 2oz Empress Gin
Instructions
- Add your ice to the high ball glass first
- First add the pineapple juice to the glass.
- Once the pineapple has settled, add in the orange juice.
- Drizzle with grenadine
- Next, add your layer of club soda
- Finish off your cocktail by adding your layer of Empress gin to the top of the glass
Notes
Be careful not to mix the layers before stirring as the drink will turn an opaque violet color.
